2-Ingredient Chocolate Cake

Fudgy, elegant and astonishingly simple. The sort of recipe that feels like a trick the first time you make it.

Cake

• 2 large sweet potatoes
• 200 g dark chocolate

Optional ganache

• 100 g dark chocolate
• 80 ml coconut milk
• 1 tsp maple syrup
• 1 tsp cocoa powder

Method

1. Bake or steam the sweet potatoes until very soft, then cool slightly and scoop out the flesh.
2. Melt the dark chocolate gently.
3. Blend or mash the sweet potato until completely smooth, then mix with the melted chocolate.
4. Pour into a lined cake tin and bake at 175 C for about 25 to 30 minutes, until just set at the edges.
5. Cool completely before slicing. If using the ganache, melt the chocolate with the coconut milk, stir in the maple syrup and cocoa, then pour over the cooled cake.

Sweet potato brings fibre and beta-carotene, which gives the cake body without flour, and dark chocolate contributes flavonoids. With only a couple of main ingredients, this is one of those recipes that proves simple can still feel deeply satisfying.
