Cashew, Oat & Chocolate Energy Balls
A slow-release little sweet thing for the moments when you want a snack that feels grounding rather than grabby.

Ingredients
Main ingredients
• 180 g rolled oats
• 140 g cashew nuts
• 20 g flaxseeds
• 20 g pumpkin seeds
• 3 tbsp peanut butter
• 2 to 3 tbsp honey
• 50 g dark chocolate, melted or finely chopped
• 2 tbsp bee pollen, optional
Method
1. Blitz the oats, cashews, flaxseeds and pumpkin seeds in a blender or food processor until finely chopped.
2. Add the peanut butter, honey and dark chocolate and pulse again until the mixture starts to clump together.
3. Roll into 7 to 8 balls.
4. Chill or freeze for about 30 minutes until firm. Dip half in extra melted dark chocolate if you like, and finish some with bee pollen.
