Chickpea Protein Chocolate Bar

Quick, simple and surprisingly satisfying. A high-protein freezer snack for when you want something sweet with a little more substance.

Ingredients

Main ingredients

• 1 scoop protein powder
• 1 x 400 g can chickpeas, drained and rinsed
• 100 to 180 g dark chocolate
• 1 tbsp coconut oil
• Sea salt, optional

Method

1. Melt the chocolate with the coconut oil.
2. Dry the chickpeas well, then roast or air fry them for about 15 minutes until they are slightly crisp.
3. Toss the chickpeas with the protein powder, then mix with the melted chocolate.
4. Spread into a lined tray or mould and chill or freeze until firm.
5. Finish with a little sea salt, if you like, then slice or break into pieces.

Good For You Note

Chickpeas bring fibre, plant protein and minerals such as folate and manganese, which is why this feels more substantial than an average chocolate snack. Dark chocolate adds polyphenols, and the added protein powder turns it into more of a functional bite.
