Dreamy Power Bars with Creamy Chocolate Spread

No-bake nut and seed bars topped with a creamy cacao spread and finished with pistachios, goji berries and coconut.

Ingredients

Base

• 1 cup almonds
• 1 cup cashews
• 1 cup walnuts
• 1/2 cup sunflower seeds
• 8 Medjool dates, pits removed
• 1/2 cup cashew or almond butter
• 3/4 tbsp salt

Creamy chocolate spread

• 1/4 cup cashew butter
• 1/2 cup cacao powder
• 1 to 2 tbsp honey or maple syrup
• 1/3 cup plant milk of choice (coconut works well)

Garnish

• Pistachios
• Goji berries
• Shredded coconut

Method

1. Soak the almonds and walnuts for 8 hours, cashews for 5 hours, and sunflower seeds for 12 hours. Drain well.
2. Add the almonds, cashews, walnuts and sunflower seeds to a food processor and pulse briefly.
3. Add the dates, nut butter and salt, then process until the dates break down and the mixture starts to bind.
4. Line a freezer-safe tray with parchment and press the mixture firmly into a rectangle about 3/4 to 1 inch thick.
5. In a bowl, whisk together the cashew butter, cacao powder, plant milk and optional sweetener until smooth.
6. Spread the chocolate layer over the bar base, then top with pistachios, goji berries and shredded coconut.
7. Cover and freeze for a few hours until set, then slice into bars. Store in the freezer for up to 1 month or in the fridge for up to 1 week.

Nuts and seeds provide healthy fats, fibre and minerals, while dates give natural sweetness and help bind the bars. The cacao topping adds antioxidant polyphenols, making these an easy make-ahead option for a more balanced sweet bite.
