High-Protein Whipped Ricotta Toast

Quick, protein-rich and easy, this ricotta toast feels elevated enough for a dinner starter but is simple enough for everyday.

Ingredients

• 2 thick slices of sourdough, toasted
• 1 tub ricotta
• 1 to 2 tsp honey
• Zest of 1/2 lemon
• Tiny pinch of sea salt
• 1 tbsp pistachios, finely chopped
• A few dried rose petals (optional)

Method

1. Add the ricotta, honey, a little lemon zest and a tiny pinch of sea salt to a bowl or food processor.
2. Whip until smooth, light and airy.
3. Pipe or spoon the whipped ricotta onto warm toasted sourdough.
4. Finish with extra lemon zest, chopped pistachios and dried rose petals, if using.

Good For You Note

Ricotta provides protein for satiety, pistachios add healthy fats and crunch, and lemon zest keeps the flavour bright. Sourdough’s long fermentation may also feel easier to digest for some people.
