Kimchi Toastie

A punchy little lunch or snack with crunch, tang and just enough comfort to make it feel properly satisfying.

Ingredients

Main ingredients

• 2 slices sourdough bread
• 60 to 70 g cheddar, grated
• 50 g kimchi, roughly chopped and lightly squeezed
• 1 spring onion, finely sliced
• A small handful of coriander, chopped

Method

1. Grate the cheddar and mix it with the chopped coriander and spring onion.
2. Pile the cheese mixture onto one slice of bread and the kimchi onto the other.
3. Close the sandwich and cook in a toastie maker until golden and crisp, or air fry at 180 C for about 10 to 15 minutes, turning once if needed.
4. Rest for a minute before slicing so the cheese settles slightly.

Kimchi brings the benefits of fermentation and a sharpness that balances the richness of the cheese. Sourdough fermentation can make bread feel easier to digest for some people, and the spring onion plus coriander add vitamin K, polyphenols and freshness.
