No-Flour Matcha Banana Bread

Simple, lightly sweet and green in the loveliest way. A fast mix-and-bake loaf for when you want something cosy but a little different.

Ingredients

Batter

• 1 cup tahini
• 3 very ripe bananas, mashed
• 2 tbsp matcha
• 2 eggs
• 1/2 tsp bicarbonate of soda
• 1/4 tsp sea salt
• 1 tsp cinnamon
• 2 tbsp maple syrup

For topping

• 1 banana, halved lengthways
• Black sesame seeds

Method

1. Preheat the oven to 175 C and line or lightly grease a loaf tin.
2. Mix the tahini, mashed bananas, matcha, eggs, bicarbonate of soda, salt, cinnamon and maple syrup until smooth.
3. Pour the batter into the tin and top with the halved banana and a sprinkle of black sesame seeds.
4. Bake for about 45 minutes, or until a knife inserted into the centre comes out clean.
5. Leave to cool before slicing.

Good For You Note

Banana gives natural sweetness and potassium, tahini adds calcium and healthy fats, and matcha contributes polyphenols such as EGCG. Because it is based on tahini rather than flour, it is also more satiating than a standard cafe-style banana loaf.
