One Pot Curry Gyoza Dumplings
A fast, cosy one-pot bowl with frozen gyoza in a creamy curry-coconut broth with vegetables and lime.

Ingredients
For 2 servings
• 1 tsp chopped chillies
• 1 tsp garlic or garlic granules
• 1 tsp ginger
• 1 tin light coconut milk
• 1/2 tin water
• 2 tsp Thai red curry paste or curry powder
• 2 tbsp tamari or soy sauce, plus extra to finish
• Juice of 1/2 lime
• 1 stock cube or bone broth
• 1 large carrot, peeled into ribbons or sliced thinly
• A handful of tender-stem broccoli
• 12 frozen gyoza
To serve
• Spring onions
• Coriander
• Crispy chilli oil, optional
Method
1. In a large pot, sweat the chillies, garlic and ginger for about 30 seconds until fragrant.
2. Add the curry paste or curry powder, stock cube, coconut milk and extra water. Stir well to combine.
3. Add the carrot, tender-stem broccoli and frozen gyoza. Cover with a lid and bring to a gentle simmer for 5 minutes.
4. Finish with spring onions, tamari or soy sauce, and lime juice to taste.
5. Serve hot with coriander and optional crispy chilli oil.

This is a practical one-pot meal with protein from the gyoza, fibre from the vegetables, and satisfying fats from coconut milk. Ginger, chilli and lime add flavour while keeping the broth bright and comforting.
