Peanut Butter + Chocolate Overnight Oats

A spoonable breakfast that tastes like dessert but lands with far more steadiness. Ideal for busy mornings when you want something ready to go.

Ingredients

Oat layer

• 2 tbsp cocoa powder
• 100 g whole rolled oats
• 2 tbsp protein powder, optional
• 200 ml plant milk
• 100 ml water
• 3 tbsp maple syrup
• 20 g chia seeds

Topping

• 2 tbsp peanut butter per cup
• 1 bar dark chocolate, melted

Method

1. Mix the cocoa powder, oats, protein powder if using, plant milk, water, maple syrup and chia seeds together.
2. Divide between jars or glasses.
3. Top each with peanut butter, then spoon or drizzle over the melted dark chocolate.
4. Leave to rest in the fridge for at least 2 hours, or overnight.

Oats and chia make this especially helpful for slow-release energy because they combine soluble fibre with healthy fats. Cocoa and dark chocolate bring flavonoids, while chia contributes omega-3s that support brain and nervous system function.
