Spicy Miso Soup Dumplings

Salty, savoury and heartwarming, with the sort of creamy chilli-spiked broth that makes a quick supper feel properly cosy.

Ingredients

Sauce

• 1 1/2 tbsp tahini or smooth peanut butter
• 1 tbsp white or yellow miso
• 1 tbsp rice vinegar
• 1/2 tbsp soy sauce or coconut aminos
• 1/2 tbsp sugar
• 1/2 garlic clove, finely grated
• A small knob of ginger, finely grated
• 1 tbsp chilli crisp
• 180 ml water

To cook & serve

• 10 to 12 frozen dumplings
• Coriander, chopped
• Sesame seeds
• Extra chilli crisp, optional

Method

1. Whisk the tahini, miso, rice vinegar, soy sauce, sugar, garlic, ginger, chilli crisp and water together in a saucepan or clay pot until smooth.
2. Add the dumplings, cover and bring to a boil. Reduce to a gentle simmer and cook for about 5 minutes, until the dumpling skins are tender and the filling is hot.
3. Finish with coriander, sesame seeds and a little extra chilli crisp, if you want more heat.

Miso adds fermented depth, ginger can help stimulate digestive juices, and tahini or peanut butter make the broth more satiating by adding fats and minerals. It is a great example of how a quick dinner can still feel warming and grounded.
